We picked up our CSA box today and were pleasantly surprised to find raspberries! We ate them tonight on top of our pop-up pancakes.
We also got:
red leaf lettuce
cucumber
spinach
sungold cherry tomatoes – these are like candy
red kale
tomatoes
banana squash
pimento peppers
liberty apples
Any ideas for the pimento peppers?

I love pimento peppers in any dish where they can stand out. they have a great sweet flavor, so I try not to cook them in dishes where they get overwhelmed by other flavors (like a pasta sauce). we put some on a pizza last night as the primary topping (we also put some fresh tomatoes on after it was cooked). They would also be yummy in a potato or cauliflower soup, something rich, but that would compliment the sweetness of the peppers. they are also great on a cheese sandwich or even just raw.
one of the farms I worked on grew over 20 varieties of peppers as part of a trial and the pimento was our favorite!
