Spring is finally here and the cherry trees are in full bloom. Ruby loves to go on walks and point out all the dadils (daffodils) to us. We celebrated the first day of spring with this yummy carrot tea cake that we shared with some good friends. My only note would be to sift the sugar for the frosting before mixing it with the cream cheese. I forget to do this so much and sometimes the frosting looks a little lumpy.
We also had the most incredible brownies for John’s birthday. I’m not a big brownie eater – which is really hard to believe. John requested brownies for his birthday and I think these will be the brownies I make from now on. They are ridiculous-good.
